1/2 cup oats
4 egg whites + 1 yolk (omega 3 enriched yolk)
Cinnamon, nutmeg, all spice to taste
*Optional: Sweeten with a ripe banana or add
Add stevia or honey to taste
Using the silicone muffin tray, pour batter into 6 muffin holes
(I usually add the berries separately so there are even amounts in each muffin) and bake at 350 for 20 minutes or until firm. You can get really daring and add spinach (I blend the spinach with water to make green juice and add that to the batter). To make 12 muffins, double ingredients above.

I am always looking for ways to get more protein in while balancing healthy carbs in my diet. This is a great take along food for those on the run in the morning. The muffins are dense and chewy. Take your time and enjoy with your morning hot beverage. They also make a great afternoon snack.
I tend to try and fill myself up to keep myself from being bored. Or at least I thought I was. But I think it's more like not being able to just be still, be present and explore what comes up next. I am so conditioned to moving. Keeping busy. I find loads of ways to stay on this course. Here is one of them, just kidding. For me, my self worth was tied up on what I achieved and how perfect I did things. I have been given the gift of freedom from your approval and know that I am enough just as I am. Whew, what a relief!
Of course I will always want to do my best and hope you do like and appreciate my efforts. However, my self worth and self esteem are no longer dependent on it. In turn I no longer expect the same of you. Aren't you happy about that? l always tell my students in class that our practice is just that, not a perfection exercise. That it's in the effort not how well you did the pose that the true results lie in. I am trying to apply that to my life and live what I teach.
Everyday is a wonderful opportunity to continue my spiritual growth along the great highway, we call life.
